Corn and Chestnut Gratin

 6 tablespoons (3/4 stick) butter 
1/4 cup all purpose flour 
3 cups half and half 
5 cups frozen corn kernels (about 24 ounces), thawed 
1/4 cup finely chopped shallot 
1 1/2 teaspoons salt 
1 teaspoon cayenne pepper 
1/2 teaspoon ground white pepper 
1 7.25-to 7.41-ounce jar whole steamed or roasted peeled chestnuts* (about 1 1/2 cups), cut into 1/4-inch pieces 
1/4 cup chopped fresh chives 
6 large eggs

Melt butter in large saucepan over medium heat. Add flour; whisk 1 minute. Gradually whisk in half and half. Bring to boil. Reduce heat to medium; stir constantly until mixture thickens slightly, about 3 minutes. Add corn and next 4 ingredients; simmer 15 minutes to blend flavors, stirring often. Remove from heat; stir in chestnuts and chives. Transfer to large bowl. DO AHEAD: Can be made 1 day ahead. Cover; chill. Bring to room temperature or rewarm slightly in microwave before continuing. Preheat oven to 375°F. Butter 13x9x2- inch glass baking dish. Whisk eggs 1 at a time into corn mixture. Transfer to prepared baking dish. Bake until puffed and golden, about 45 minutes. Serve hot.

 

   

Pear and Raisin Crumble 

2 1/2 pounds ripe pears, peeled, quartered, cored, cut into 1/3-inch-thick slices 1/3 cup plus 1/2 cup (packed) dark brown sugar
6 tablespoons crushed ginger cookies (such as Ginger Man), divided
2 teaspoons ground cinnamon, divided
1/2 cup raisins
1/2 cup all purpose flour
6 tablespoons (3/4 stick) chilled butter, diced
3/4 cup walnut pieces

Preheat oven to 400°F. Mix pears, 1/3 cup sugar, 2 tablespoons crushed cookies, and 1 teaspoon cinnamon in 11x7x2-inch glass baking dish. Mix in raisins. Using fingertips, press together flour, butter, 1/2 cup sugar, and 1 teaspoon cinnamon in large bowl until moist clumps form. Mix in 4 tablespoons crushed cookies and nuts. Drop topping evenly over filling. Bake until juices bubble thickly and topping is brown, about 40 minutes.

 

Make Your Own Cranberry Sauce This Year

 

2 cups cranberries
Juice and chopped zest of 1 orange
1/4 cup Port
1/2 cup sugar, or more if needed
1 teaspoon cinnamon
1 tablespoon cornstarch

 

In a small saucepan combine cranberries, orange juice and zest, port, sugar and cinnamon. Bring to a boil, reduce heat to simmering and cook until cranberries are tender, stirring occasionally. In a small cup, make a slurry with cornstarch and 1 tablespoon water. Whisk cornstarch mixture into cranberry sauce and cook, whisking, until sauce thickens. Taste and add more sugar, if necessary.

Serve warm or refrigerate and serve chilled.

What is the Right Serving Temperature For Wine? 

Most of us inadvertently serve our white wines too cold and our red wines too warm.  This hides the subtle fruit flavors in both types of wines. 

Here is an easy way to correct this: 

Keep your white wines in the refrigerator until approximately 1/2 hour before serving dinner.  Take them out of the refrigerator and place them on the table.  At the same time, put your red wines in the refrigerator and leave them there for the 1/2 hour before dinner.   

Both will now be at a perfect temperature to enjoy their full character.
