Remember, your food should not overpower your
wine.
Beef-
Hearty,
fatty/chewy steaks need a wine with body & texture to match its
own texture. Something like a cabernet, sauvignon, red zinfandel and
shiraz/syrah. But more tender or less fatty/chewy beef like filet mignon
or prime rib go great with softer, fruitier reds like merlot, pinot
noir and sangiovese.
Poultry-
Most
often when we mention poutry, we're talking about chicken which is really
versatile when paired with wine. Depending on its preparation and what
sauces might accompany it, you can pair poultry with wines as light
as sauvignon blanc and as heavy as cabernet. Other recommendations include
chardonnay, merlot, zinfandel and pinot noir.
Pork-
Pork
can be prepared sweet, sour or spicy, all of which pair well with gewurtztraminer.
Grilled sausages and bacon call for the intensity of a syrah. The rich
spiciness of BBQ ribs fits well with zinfandel because both the wine
and the sauce have such intenses flavors.
Seafood-
Most
fish and shellfish which are fairly delicate dishes pair well with lighter
wines like sauvignon blanc and unoaked chardonnay. Heavier seafood like
red snapper or other fish that is smoked or served with cream sauces
can be easily paired with a red wine such a pinot noir or zinfandel.
Vegetarian-
With
these dishes, anything goes from light and delicate to heavy and robust.
For heartier dishes with tomatoes, herbs, mushrooms and cheeses, a more
robust wine like zinfandel and shiraz are a good match. For lighter
fare like potatoes, greens and dried fruit, go for a lighter white like
chardonnay, sauvignon blanc or riesling.
Lamb-
Many
lamb dishes are marinated with a lot of herbs and/or garlic. For this
reason, reds seem to go with this meat the best. Depending on its preparation,
of course, light reds like pinot noir and merlot to heavier, more flavorful
reds like syrah and cabernet sauvignon.
Dessert-
Light,
fruity desserts like a puff pastry or fruit tart pair well with moscat
wines which are available bubbly or still. (With or without carbonation)
Richer and sweeter desserts which contain chocolate, poached fruit or
desserts with candy demand a port wine or something with intense flavors
like framboise (raspberry).
Remember, your dessert wine should always be sweeter
than your dessert.
